What is erythritol? The name sounds quite chemical…

Erythritol is an alcoholic sugar produced by fermentation. This means it is a natural sweetener. Erythritol is found in its natural form in fruits (watermelons, pears, peaches and grapes), mushrooms and fermented foods (cheeses, wine, beer, etc.). Erythritol with stevia is resistant to high temperatures and therefore has no limitations when it comes to baking and cooking.

And why is erythritol with stevia a good choice?

The difference between classic erythritol and erythritol with stevia is that the taste of erythritol with stevia is almost identical to white sugar and, due to the addition of stevia, achieves a sweetness level equivalent to that of classic sugar (1 teaspoon of erythritol with stevia is equivalent to 1 teaspoon of sugar). Whereas classic erythritol achieves a sweetness level of about 80 % that of classic sugar (1 teaspoon of erythritol with stevia is equivalent to 1 teaspoon of sugar). Erythritol with stevia is therefore used less than conventional erythritol for the same sweetness effect.

The best feature of stevia erythritol is that it has NO calories and no effect on blood sugar and insulin spikes (its glycaemic index is ZERO), so it can be safely used by diabetics. And that’s not all. Studies have shown another interesting property of erythritol with stevia, namely that it does not cause tooth decay and helps to rebuild tooth enamel. This, of course, cannot be attributed to traditional white sugar.

Unlike other alcoholic sugars, erythritol with stevia is mostly absorbed into the blood in the small intestine, but is then not metabolised and is excreted from the body in the urine. It also has the advantage of not causing indigestion compared to xylitol and maltitol, but it can still have a laxative effect in large quantities. Moderate consumption is recommended. For owners of canine friends, it is very important to know that erythritol with stevia is not problematic for dogs (and other pets) if it is accidentally ingested by the dog. Unfortunately, this is not the case for xylitol (or birch sugar), which is fatal (!) to dogs in very small quantities.
