INGREDIENTS
- 2 egg yolks
- 2 teaspoons lemon juice
- 1 tablespoon white wine
- 140 g butter
- Salt and freshly ground pepper
METHOD
Cut the softened butter into small pieces. Pour water into a tall pot and bring to a boil. In a bowl that fits over the pot (making sure the bottom does not touch the water), pour the lemon juice and wine. Add the egg yolks and stir continuously until the yolks double in volume. Gradually add the butter while stirring. Stir until the sauce thickens.
Season with salt and pepper and serve warm.
