Blueberry Cheesecake
A fantastic and easy dessert, quick to prepare and heavenly delicious!
INGREDIENTS
For a 28 cm (11 in) diameter
Base:

50 g melted butter

70 g organic defatted coconut flour Live & Love

70 g defatted almond flour Live & Love

2 tablespoons erythritol with stevia Live & Love

4 eggs
-
1 teaspoon cream of tartar (or baking powder)
Cream:
-
200 g cream cheese (e.g., Philadelphia)
-
200 g mascarpone cheese
-
4 tablespoons erythritol with stevia Live & Love
-
3 eggs
-
Seeds from 1/2 vanilla pod (or vanilla extract)

150 g frozen wild blueberries
METHOD
If using frozen blueberries, place them in a sieve and let them thaw on the counter. Put a bowl underneath to catch the excess liquid.
Mix the ingredients for the dough (for the base) into a compact mass and chill for 20 minutes. Grease a pie or cake pan (28 cm diameter) well and spread the dough over the bottom and sides with your fingers. Any leftover dough can be grated over the cream at the end (before baking). Prick the dough with a fork and bake for 15 minutes at 175°C (350°F).
Meanwhile, prepare the cream. Mix all ingredients except the blueberries. Pour the cream onto the pre-baked base and spread the blueberries evenly.
Bake for another 35–40 minutes at 175°C (350°F). Check occasionally to make sure it doesn’t brown too much (baking times can vary depending on the oven).

MY TIPS
- Instead of defatted almond flour, you can also use sunflower flour and add 1 tablespoon of cocoa powder.
- Part of the almond flour can be replaced with ground hazelnuts or almonds.
If you replace erythritol with stevia with regular erythritol, the amount of sweetener needs to be adjusted or increased accordingly. - Erythritol with stevia is about 25% sweeter than regular erythritol. Live & Love brand erythritol with stevia does not bake and has no cooling aftertaste, which may not be the case with regular erythritol from other brands. The recipe uses Live & Love defatted almond flour, which is light, finely ground, and has no marzipan taste.
- Instead of blueberries, you can also use currants or raspberries. Alternatively, you can simply omit the berries.
