Creamy mash
For a long time, I searched for a good substitute for classic mashed potatoes. Something with a soft, fluffy texture and a delicate, buttery taste. I think I’ve finally succeeded! Why? Because it passed with flying colors among my picky eaters—without any complaints.
Cauliflower is not my favorite vegetable. I prefer almost anything else to cauliflower. I don’t like its taste, and I don’t like how it used to make me feel bloated. That’s why I avoided anything with cauliflower for a long time. But then I decided to give it one last chance and soon discovered that mashed cauliflower behaves completely differently than boiled cauliflower in chunks (which causes me digestive issues).
And this mash is the perfect substitute for classic mashed potatoes. Don’t worry—it doesn’t taste like cauliflower or eggs.
INGREDIENTS
for 4-5 people:
- 1 cauliflower (500 g)
- 4 hard-boiled eggs
- 150 g mascarpone cheese
- 100 g butter
- Salt
- 2 tablespoons BIO potato fiber Live & Love
METHOD
Cut the cauliflower into pieces and cook it until soft. If possible, steam it. Otherwise, boil it in salted water and thoroughly dry it afterward.
Place the cooked cauliflower in a food processor or blender (you could also use an immersion blender), add the peeled hard-boiled eggs, mascarpone, butter, and BIO potato fiber, and blend until completely smooth. Then, season with salt to taste and adjust the texture by adding more fiber/additional hard-boiled egg (if the mash is too runny) OR butter/mascarpone (if the mash is too dry or not creamy enough).
You can also add a bit of ground nutmeg and spices to taste.

MY TIPS
If you have leftover mash, you can use it for:
- Thickening sauces
- Mixing it with a raw egg, some Parmesan cheese, and herbs, shaping it into dollops on parchment paper (or piping it), and baking it
- Making LCHF shepherd’s pie
- Simply storing it in the fridge and reheating it the next day.
