Gratinated Vegetable Nests
This recipe can be used as a main dish or as a side dish. In both cases, it’s excellent.
INGREDIENTS
Adjust and combine the quantities as desired:
- zucchini
- butternut squash
- kohlrabi
- grated cheese
- sour cream
- 2 eggs
- spices
- salt
If you want to add an egg in the middle, you will need as many eggs as nests you prepare.
METHOD
Slice the vegetables into thin strips using a slicer. Salt well and let rest for at least 20 minutes in a strainer so the vegetables release water and soften. Transfer to a kitchen towel and pat dry thoroughly.
Place in a bowl. In a separate bowl, mix a handful of grated cheese, 2 eggs, spices (pepper, basil, garlic powder, …) and 2 tablespoons of sour cream. Pour over the sliced vegetables and mix well.
Grease a baking dish well and form small mounds (nests) from the vegetable mixture. Bake covered at 200 °C (390 °F) for 15 minutes (if you don’t have a covered baking dish, cover with aluminum foil). Uncover, make a small hole in the middle of each nest, crack an egg into it, and bake uncovered until golden and the egg is set.

MY TIPS
You can play around with the ratios of different vegetables – the dish looks best (and most colorful) if you use a variety of colors.
