KETO Quiche
This is really quick and easy, and most importantly, delicious! You can customize it with any additions you like. The dish can be enhanced with extra vegetables (e.g., spinach, broccoli…), sliced mushrooms, or different cheeses… The possibilities are endless. The quiche can be eaten warm or cold, as a main meal or a quick snack.
INGREDIENTS
DOUGH (for 24 cm diameter):
- 130 g BIO defatted golden flaxseed flour Live & love
- 90 g BIO defatted sesame flour Live & love (for alternatives, see my notes)
- 140 g butter
- 2 eggs
- 2 tsp cream of tartar (or baking powder)
- 1 tbsp vinegar
- ½–1 tsp salt
FILLING:
- 230 g grated cheese of your choice (I used half cheddar and half mozzarella)
- 150 g diced Hamburg bacon
- 200 ml full-fat cream
- 4 eggs
- 2 small onions (or leeks)
- 2 garlic cloves
- 2 tbsp BIO Ghee butter Live & love
- Spices to taste: nutmeg, pepper, chives, marjoram…
Salt to taste (I used 1 heaping tsp)
METHOD
Prepare the dough by kneading all ingredients together. I do this using a food processor with a blade. Roll out the dough between two sheets of baking paper to about half a centimeter thickness. Cut to fit your baking dish and transfer to the baking tray with the paper. Use the remaining dough to form a 3 cm edge. Prick the base with a fork. Bake at 200°C for about 8–10 minutes.
Meanwhile, prepare the filling. Sauté the onions, garlic, and bacon in BIO Ghee butter. Separately, mix eggs with cream, add salt and spices, stir in grated cheese, and pour the mixture onto the pre-baked crust. Bake for an additional 25–30 minutes at 200°C. If it browns too quickly, lower the temperature.

MY TIPS
- This dish works wonderfully both warm and cold.
- The baked quiche can also be frozen.
- Instead of sesame flour, you can use an equivalent amount of defatted almond or pumpkin seed flour.
- Bacon can be replaced with pieces of Kranjska sausage, ground meat, or the meat portion can be omitted entirely.
- You can also add a bit of vegetables to the filling according to your taste (for example, broccoli, spinach, mushrooms…).
