LCHF “bread” dumplings
These dumplings are the perfect side dish for sauces, goulash, stews… In taste and texture, they resemble traditional bread dumplings: soft and fluffy. The trick is in the preparation. They are not boiled in water, but cooked in the microwave.
INGREDIENTS
For 18–20 small dumplings (serves 4)
- 500 g quark (full-fat)
- 3 eggs
- 1 teaspoon salt
- 20 g finely ground psyllium husk Live & love
- 70 g defatted almond flour Live & love
- 30 g BIO potato fibers Live & love
- ½ packet baking powder / cream of tartar
- Chives, parsley (or herbs of your choice)
- A little garlic powder
- Butter
METHOD
Place the quark in a bowl, mash well with a fork, then add the eggs and all dry ingredients. Mix thoroughly and shape small balls (about 4–5 cm in diameter) with slightly wet hands. Pour a little water into a microwave-safe dish or plate, just enough to cover the bottom.
Arrange the dumplings in the dish/plate with a few centimeters between them, as they will expand while cooking. You can place a small piece of butter on each dumpling. Cover gently with plastic wrap, making a few holes to let the steam escape.
Set the microwave to the highest power. Since microwave ovens vary in strength and functions, it’s best to test the cooking time the first time. As a guideline, allow 1 minute per dumpling. So, if cooking five at once, set the time to 5 minutes. Check by cutting one open and adjust cooking time if needed.
The dumplings turn out soft, fluffy, and tasty, similar to traditional bread dumplings.

MY TIPS
- If you don’t have a microwave, the dumplings can also be cooked in water or steamed. However, they will be moister.
- You can also add various ingredients to the dumpling dough to enhance the flavor, such as sautéed bacon, onions, Parmesan, or different herbs and spices.
- If you omit the salt and add erythritol with stevia, you will get sweet dumplings. They can also be filled as desired.
- The almond flour in this recipe can be replaced with defatted pumpkin or sunflower flour, but this will affect the taste.
- The potato fiber in this recipe cannot be substituted.
