LCHF Shepherd’s pie
Shepherd’s pie is a wonderful dish that combines a rich meat sauce with a delicate mash. In the original version, it’s made with either pumpkin or potato mash and is known for its various adaptations. One of them is the KETO variant, where potatoes are replaced with cauliflower. Cauliflower mash has a creamy and delicious taste, and surprisingly, the flavor of cauliflower isn’t overpowering. Even the little ones love this dish, as confirmed.
INGREDIENTS
For the meat sauce:
- 500 g mixed minced meat
- 1 onion
- 250 ml tomato sauce (without additives)
- Garlic
- Seasonings: salt, pepper, basil, bay leaf, parsley, etc.
- Optional: grated carrot, zucchini, diced bacon, etc.
- Organic Ghee butter Live & love for frying
For the cauliflower mash:
- ½ head of cauliflower (500 g)
- 50 g butter
- 2 hard-boiled eggs
- 100 g mascarpone cheese
- 2 tablespoons of organic potato fiber Live & love
- Garlic powder, nutmeg
- Salt
- 100 g grated cheese
METHOD
First, prepare the meat sauce. Sauté finely chopped onion, add the meat, tomato sauce, and season to taste. Cook the meat sauce for about 25-30 minutes or until the meat becomes tender. Meanwhile, boil the cauliflower florets in salted water for about 10 minutes. Drain all the water and transfer the cauliflower to a blender, adding butter, eggs, mascarpone, organic potato fiber, and season to taste. Blend into a creamy mash. If it’s too runny, you can add more potato fiber or an additional hard-boiled egg.
Spoon the meat sauce into a baking dish or individual portion dishes, and layer the cauliflower mash on top. Sprinkle with grated cheese. Bake for 25-30 minutes at 180 degrees Celsius or until a nice golden crust forms.
A side of green salad complements the LCHF Shepherd’s Pie perfectly.
