LCHF tortillas
I was craving tortillas. The normal, thin ones that roll up nicely and taste like… tortillas. Of course, classic tortillas are out of the question on the LCHF/KETO diet, as the main ingredient is wheat flour. All other versions (rice, gluten-free, corn, etc.) are also out.
It took a few attempts to come up with a combination and a recipe that I am really happy with.
LCHF tortillas are cereal flour-free, gluten-free, starch-free and lactose-free. They are ideal to spice up menus, to make different wraps, snacks, they can be filled and gratinated in the oven… they can be used in the same way as classic corn tortillas. Since they are low in carbohydrates, they are also suitable for diabetics and all people with various intolerances or allergies (gluten, dairy, etc.).
INGREDIENTS
For 3 tortillas (approx. 22 cm in diameter):
- 30 g Live & love organic sesame flour
- 40 g Live & love Organic Golden Flax Flour
- 15 g Live & love Organic potato fibre (PoFibre)
- 1/2 teaspoon Indian thistle powder
- 1/2 tsp salt
- 1 egg
- 100 ml warm water
- 2 tsp vinegar (optional, it adds to the lightness)
METHOD
Mix all the ingredients into a dough. Divide into 3 parts. Generously sprinkle the surface to be rolled (I recommend baking paper or a silicone rolling surface) with organic potato fibre. Roll thinly into a circle, keep moving the dough to prevent it from sticking to the rolling pin or the surface. If it sticks, add a little fibre. If you want neatly shaped tortillas, take a lid (or other round object) and cut a circle.
Bake in a non-stick pan without fat for a few seconds on each side, turning several times. The dough can be poked in a few places with a fork to prevent it from puffing up. Between each baking, clean (wipe with a dry napkin) the pan to make sure there is no residue (so that the fibre does not burn, as it will leave a bitter taste).
The tortillas must be soft, not tear when they are rolled. They should therefore not be over-baked. They taste like wholemeal tortillas
Fill them as desired.

- These tortillas can also be frozen. I freeze them already baked, but you can also freeze them raw. Just make sure to separate them with a piece of baking paper or cling film to prevent them from sticking together.
