Quiche with “kranjska” sausage
It is a savory pie that is excellent as a standalone dish, as a side, or as a cold snack. It is gluten-free and grain-free, making it suitable for diabetics! This pie is named after ”Kranjska” sausage.
INGREDIENTS
Ingredients for the dough (for a 24 cm diameter baking dish):
- 100 g defatted BIO golden flaxseed flour Live & love
- 50 g defatted almond flour Live & love
- 130 g softened butter
- 2 eggs
- 1 teaspoon baking powder
- ½ teaspoon Himalayan salt
Ingredients for the filling:
- ½ sausage
- 1 small broccoli
- 1 leek (white part of the leek)
- 1 small zucchini
- BIO Ghee butter Live & love for sautéing
Ingredients for the topping:
- 3 eggs
- 200 ml cream
- 100 g grated cheese
- Chives, a pinch of salt, garlic powder
METHOD
- Preparation of the dough:
Mix the dry ingredients and add the eggs and softened butter. Mix everything well. Instead of almond flourl, you can also use sesame or pumpkin flour, but it slightly affects the taste and color.
Prepare a baking dish and grease it well with butter (or line it with baking paper). Roll out the dough between two layers of baking paper and transfer it to the baking dish in parts, or simply shape the dough with your fingers on the bottom and around the edge of the baking dish (to a height of 2-3 cm). Prick the bottom in several places with a fork. Bake the prepared base in the oven for 8-10 minutes at 180 degrees Celsius.
- Preparation of the filling:
Chop all the ingredients into small pieces. Sauté the leek (or onion) in a spoonful of fat, add the chopped vegetables, chopped sausage, and season to taste.
Spread the sautéed vegetables over the baked base and pour over the topping, prepared by mixing eggs, cream, grated cheese, and spices.
Bake for about 30 minutes at 170 degrees Celsius.

MY TIPS
- If you don’t have Kranjska sausage, you can replace it with a bit of ground meat, tuna, or diced chicken breast. Of course, you can also skip the meat entirely and add more vegetables instead.
- You can substitute almond flour with defatted sesame, sunflower, or pumpkin seed flour.
- This savory pie tastes great both warm and cold. You can also freeze it after baking for later!
