Salmon with vegetables “en papillote”
Salmon with vegetables “en papillote” is much simpler dish than it seems at first glance. “En Papillote” means that the dish is prepared in a parchment paper pouch. This method ensures that the salmon is tender, juicy, and flavorful. It’s impossible for it to be too dry or undercooked in the middle, as can happen quickly when pan-searing it.
This dish is also ideal for special occasions such as Valentine’s Day, anniversaries, birthdays… Why? Because with small details, we can create a magical atmosphere that will delight our guests. The dish can be served in the shape of a heart, and the heart shape is also revealed when we open the packet.
INGREDIENTS
for 2 people:
- 2 salmon fillets (2 x 125 g)
- 1 small zucchini
- 1 small shallot
- White part of leek
- 2 slices of lemon
- 1 bell pepper
- A handful of cherry tomatoes
- Salt, pepper
- Rosemary
- BIO ghee butter
- 2 sheets of parchment paper
METHOD
Prepare 2 sheets of parchment paper. For special occasions, you can cut out heart shapes. Fold the paper in half and draw half of a heart. Cut it out.
Slice the zucchini into thin strips (you can use a slicer) and lightly salt to release excess moisture. Cut the white part of the leek and the bell pepper into strips. Halve the cherry tomatoes, and slice the lemon and shallot into rings.
Season the salmon with salt and pepper. Optionally, you can add a little garlic powder, rosemary, or fish seasoning.
Spread the heart-shaped parchment paper and place the zucchini strips (pat dry with a kitchen towel) along the center fold, followed by the remaining vegetables. Place the seasoned salmon fillet on top of the vegetables, followed by a lemon slice and 1 teaspoon of BIO ghee butter. Lightly sprinkle with salt.
Fold the heart back together by folding the edges (fold every inch) to create a sealed edge.
Repeat the process with the second piece of salmon. If you want both parcels to form a heart shape, mirror the second parcel (instead of folding to the right, fold to the left).
Place both parcels on a baking sheet and bake in a preheated oven at 200 degrees Celsius for about 15-20 minutes.
Serve in the parcels. Be careful when opening as hot steam will escape.

MY TIPS
- If you’re not a fan of salmon, you can use any other fish fillet.
- You can replace BIO ghee butter with regular butter or herb butter. However, BIO ghee butter enhances the dish with a rich, buttery flavor.
- Feel free to adjust the vegetables to your taste—you could also use asparagus, broccoli, etc.
- You can use fresh or frozen salmon fillets. If using frozen, make sure to thaw and pat them dry before cooking.
