Spring wild garlic soup
This soup is really delicious, healthy, cheap and quick to make. Everyone in our family loves it.
If you are NOT familiar with wild garlic, you should get the right knowledge of what it looks like and what it can be replaced with in the wild. Because swapping it for another plant can be very dangerous! Do not pick wild garlic if you don’t know it.
INGREDIENTS
INGREDIENTS (for 4 people):
- 1 large leek
- 1 large zucchini (green)
- wild garlic (the more the better)
- soup base, bone broth, water… whatever we have
- salt
- lard for roasting
- spices: bay, marjoram, pepper, nutmeg
- garlic
- cream (sweet/sour – to taste)
- butter
METHOD
Fry the leek on the fat, add the sliced zucchini, sliced wild garlic, bay, marjoram, garlic, salt, pepper… fry, add the bone broth, vegetable broth or water, simmer for 10 minutes. Remove the bay leaves. Blend with a stick blender (or blend in a blender – just carefully and not all at once), add nutmeg and a little sweet cream. Garnish with chopped wild garlic.
Enjoy!
MY TIPS
- The sour cream can be offered on the side and added to the plate after serving.
- I used 6 large handfuls of chopped wild garlic.
