Zucchini Spaghetti with Sauce
In the LCHF/KETO diet, all types of traditional pasta are eliminated. Zucchini is an ideal substitute for spaghetti, as it has a mild flavor, and with the help of a spiralizer (you can also use a regular grater, though the spaghetti won’t be as thin and long), you can create a healthy pasta alternative. This dish is also perfect for diabetics, as it has an extremely low glycemic index.
INGREDIENTS
- Zucchini
- BIO Ghee butter for frying
- Himalayan salt
- Sauce and toppings of your choice
METHOD
Use a spiralizer to cut the zucchini into spaghetti. Place them in a colander, sprinkle with salt, and leave for a few minutes to let the salt draw out the water. Transfer the zucchini spaghetti onto a paper towel or kitchen cloth and pat off the excess moisture. In a pan, melt a cube of butter and quickly sauté the spaghetti. Add your preferred sauce—bolognese sauce or a creamy shrimp sauce are excellent choices.
