LCHF/KETO burger
A delicious and juicy burger that should not be missing at any picnic! Completely free of gluten, cereal flours, with a low proportion of carbohydrates. An ideal choice for anyone who avoids gluten, carbohydrates, suitable for LCHF/KETO, Low carb diets and also for diabetics.
INGREDIENTS
FOR THE PREPARATION OF 5 TO 7 BOMBETS
- 3 eggs
- 3 egg whites
- 80 g of organic defatted golden flax flour Live & love
- 50 g of organic potato fiber Live & love
- 250 g Mileram cream (or sour cream)
- 30 g of finely ground ind. plantain (2 heaped soup spoons)
- 100 ml of warm water
- 3 tablespoons of vinegar (apple cider)
- 1 small teaspoon of salt
- 1/2 teaspoon of baking soda
- 1 packet of tartar (baking powder)
FOR SPREADING BOMBETS Organic potato fiber and various seeds as desired
MEAT PATTIES FOR BURGERS (150-170g of meat per person)
- 600 g of ground beef, salt and pepper
ONION SAUCE
- 2 large onions
- BIO ghee butter (2-3 tablespoons)
- salt
HOMEMADE MAYONNAISE
- 1 egg yolk
- 2-3 large spoons of BIO Ghee butter (melted)
- 1 clove of garlic and salt
OPTIONAL ADDITIONS: bacon, cheese, tomatoes, lettuce, arugula, cucumbers, onions, leeks, avocado…
METHOD
PROCEDURE FOR THE PREPARATION OF BOMBETS
Separate the eggs and make firm, compact snow from 6 egg whites. While mixing, add 3 egg yolks and Mileram cream. Mix all the dry ingredients together. Mix vinegar with boiling water. While mixing, alternately add dry ingredients and boiling water with vinegar.
With wet hands, form bombettes (5-7 pieces come from the mass). Sprinkle them with seeds or roll them in organic potato fibers. Bake them in a preheated oven for 35-40 minutes at 180 degrees. Turn off the oven and leave them in the oven to cool.
ONION SAUCE
Cut the onion into leaves and fry it in BIO Ghee butter slowly and at a low temperature until soft. Salt to taste.
HOMEMADE MAYONNAISE
BIO Ghee butter is melted until it becomes liquid. Separate the eggs and place the yolk in a tall bowl. Mix with the help of a mixer or stick blender and add melted BIO Ghee butter in a stream while mixing. Add a crushed clove of garlic and salt to taste.
THE PROCEDURE OF THE PREPARATION OF POLPET
With the help of a model for forming burgers or with our hands, we form meat patties. Bake them on the grill or in a pan. Salt and pepper. At the end of baking, place a slice of cheese on each patty.
ASSEMBLING THE BURGER
Cut the baked bombettes in half, place the fried onion, baked patty, cheese, lettuce, tomato, cucumber, and bacon on the bottom half. Spread homemade mayonnaise on the top half.
