KETO Energy Bars
Healthy energy bars that provide a quality intake of fats and taste great at the same time? Totally simple! The recipe is highly adaptable — you can swap ground almonds for ground hazelnuts, raspberries for blueberries or other berries… For the best energy boost, you can drizzle the bars with MCT oil after baking.
INGREDIENTS
For a 30×30 cm baking tray:
For the base:

300 g ground hazelnuts (or a mix of hazelnuts and almonds)

60 g Live & love BIO almond flour

250 g butter
-
2 eggs
-
180 g coarsely ground coconut flour
-
2 tbsp Live & love Erythritol with stevia
-
Seeds of a vanilla pod or natural vanilla flavor
For the filling:
-
400 g raspberries, blueberries, or mixed berries
-
2 tbsp Live & love Erythritol with stevia (or to taste)
-
1 tbsp Live & love defatted finely ground coconut flour
For the crumble:
-
1/3 of the base mixture
-
40 g chopped walnuts
-
1 chopped Torras stevia chocolate bar (forest fruits flavor) – see notes for alternatives
After baking (optional):
-
1–2 tbsp Live & love BIO MCT oil
METHOD
Briefly cook the raspberries or mixed berries with added erythritol with stevia. To thicken, add a tablespoon of defatted coconut flour (or a small amount of konjac flour, powdered gelatin, or xanthan). The berries should not completely dissolve – cook them only until they release some juice. If raspberry seeds bother you, you can press the raspberries through a sieve – in that case, you will need to thicken them a bit more with powdered gelatin, konjac flour, coconut flour, etc., to achieve a texture similar to jam.
For the base, mix all the listed dry ingredients. Add the eggs and melted butter and mix well. Set aside 1/3 of the prepared base and spread the rest into a baking tray lined with parchment paper. You can use a cake tin or any baking tray with edges. Press the base with your fingers into a half-centimeter layer. Spread the cooked berries over it. Crumble the remaining 1/3 of the base on top. Sprinkle with chopped walnuts and the chopped Torras stevia chocolate bar with forest fruit flavor.
Bake for 25 minutes at 175°C. Allow to cool and cut into rectangular slices. Store in the refrigerator. If desired, you can also freeze them in an airtight container or tightly sealed bag and take them out of the freezer as needed.
My tip: For even better energy value, drizzle with MCT oil after baking.

MY TIPS
- For an even better taste, you can stir a few tablespoons of sugar-free fruit spread into the cooked berries. I recommend raspberry or forest fruit spread.
- You can skip the chocolate or use regular dark chocolate without added sugar.
- Store the slices in an airtight container in the refrigerator.
- If replacing erythritol with stevia with regular erythritol, adjust (increase) the amount of sweetener accordingly. Erythritol with stevia is about 25% sweeter than regular erythritol. Live & love erythritol with stevia does not cause a burning sensation and has no “cooling” aftertaste, which, however, cannot be excluded with regular erythritol from other brands.
