Aromatic LCHF Chocolate Cookies
This recipe combines the aromatic touch of gingerbread with the velvety taste of dark chocolate.
INGREDIENTS
- 80 g butter
- 40 g erythritol with stevia Live & Love
- 1 egg
- 1 tablespoon defatted almond flour Live & Love
- 180 g finely ground walnuts or hazelnuts
- 60 g melted Torras dark chocolate with stevia
- 20 g Bio cocoa powder Live & Love for baking
- 1-2 teaspoons gingerbread spice mix
- A few drops of rum
- Vanilla aroma
METHOD
Cream the butter with the sweetener until fluffy, then add the melted chocolate, egg, and all other dry ingredients.
Form small balls (about the size of a walnut) and gently flatten them on a baking sheet. If desired, roll the balls in ground walnuts or hazelnuts before baking.
Bake at 180°C (356°F) for about 10-12 minutes. The cookies should still be soft when removed from the oven. If desired, decorate them with chocolate.

MY TIPS
- If replacing erythritol with stevia with regular erythritol, the amount of sweetener should be adjusted accordingly. Erythritol with stevia is about 25% sweeter than regular erythritol. The Live & Love erythritol with stevia does not have a cooling aftertaste or a burning sensation, which may occur with regular erythritol from other brands.
- Instead of dark chocolate with stevia, you can use regular dark chocolate without added sugar or Torras baking chocolate bars.
