Keto fat bombs with MCT Oil
Keto Coconut Balls with MCT Oil are a great source of energy, containing as much as 98% fat! They are a delicious way to ensure sufficient intake of quality fats.
INGREDIENTS
- 125 ml heavy cream
- 125 g butter
- 25 ml Live & love MCT oil
- 100 g grated coconut (coarse coconut flour)
- 20 g defatted finely ground Live & love BIO coconut flour
- 1 tbsp Live & love Erythritol with Stevia
- 1 tbsp coconut oil
- Seeds of 1 vanilla pod (or natural vanilla flavor) – optional
For coating / filling:
- A few tablespoons grated coconut (coarse coconut flour)
- Blanched almonds (optional)
METHOD
Heat the heavy cream in a saucepan, making sure it doesn’t boil. Add the diced butter, a tablespoon of erythritol with stevia, coconut oil, the seeds of a vanilla pod (or a few drops of natural vanilla flavor), and MCT oil. Stir until the butter is completely melted.
In another bowl, mix the finely ground coconut flour with the grated coconut. Pour over the melted mixture and stir well until combined. Place the mixture in the fridge for at least 30 minutes to allow it to set.
Then shape into balls, roll them in grated coconut, and if desired, place one blanched almond in the center of each ball.
Enjoy!
MY TIPS
- You can also divide the mixture into silicone molds (for mini muffins, ice cubes, pralines…). In this case, do not chill the mixture first, but place it into the molds while still soft. Optionally, you can decorate or coat them with chocolate. Torras chocolate bars with stevia work very well.
- The flavor can be enhanced with a spread with almond flavor. I recommend BeKETO spread.
You can also add MCT oil or flavored collagen powder (white chocolate & coconut flavor). I recommend powdered MCT oil and collagen with added powdered MCT oil. - You can read everything about MCT oil in the blog About MCT Oil.
