KETO Soft Gingerbread Cookies
Soft, large gingerbread cookies. Fragrant and tasty. The kind that must not be missing on any holiday, especially at Christmas.
INGREDIENTS
- 6 eggs
- 80 g erythritol with stevia from Live & Love
- 100 g butter
- 80 g finely ground almonds
- 60 g finely ground walnuts
- 50 g defatted almond flour from Live & Love
- 1 tablespoon coconut oil
- 2 teaspoons cream of tartar (or baking powder)
- 2–3 tablespoons gingerbread spice
- Contents of half a vanilla pod or vanilla extract
- 1 pinch of salt
For the topping:
- 100 g Torras dark chocolate (for alternatives see notes)
METHOD
Whip the egg whites into stiff peaks. Beat the yolks with the sweetener, butter, and coconut fat until creamy. Add the dry ingredients and gently fold in the egg whites at the end.
I used various silicone molds and a mold for American donuts (which needs to be greased before baking). If you don’t have these molds, you can place the batter in a baking pan and bake as a 2–3 cm thick sponge.
Bake for about 12–15 minutes at 180°C, depending on the thickness of the batter. Be careful not to burn it, as this will make the pastry dry.
Once cooled, coat with chocolate or make a glaze according to the method described in the notes (if using silicone molds).

MY TIPS
- Instead of Torras dark chocolate, you can use regular dark chocolate without added sugar.
- Spices for gingerbread can be found in well-stocked stores in the spice section or baking aisles. Make sure to choose those without added sugar or flavor enhancers.
- If you don’t have silicone molds, you can simply bake the dough in a baking pan, coat it with chocolate, and cut it into cubes/slices.
- If substituting Erythritol with Stevia for regular Erythritol, the amount of sweetener should be adjusted or increased accordingly. Erythritol with Stevia is about 25% sweeter than regular Erythritol. Erythritol with Stevia from the Live & love brand does not affect baking and has no “cool” aftertaste, which is not guaranteed for regular Erythritol from other brands.
- Instead of defatted almond flour, defatted sunflower flour can be used.
- If using silicone molds, after baking, carefully remove the pastry from the molds, clean the molds, coat them with chocolate, gently place the pastry back in, refrigerate (or place in a cool area) to set the chocolate, and then carefully remove everything from the silicone molds.
