Wizard Spiders – Cookies
Since it’s that time of year, I decided to upgrade the classic hazelnut cookies and turn them into friendly spiders that can add a fun touch to a Halloween party. Of course, they are flour-free and sugar-free. The spider eyes are made from edible sugar decoration with sucralose, and I’ve also included other options in the recipe for how to make this decoration.
INGREDIENTS
- 100 g defatted almond flour Live & Love
- 60 g ground roasted hazelnuts
- 120 g cold butter
- 2 egg yolks
- 50 g erythritol with stevia Live & Love
- 1/2 teaspoon cream of tartar (baking powder)
- A few pinches of ground vanilla (or the contents of 1/2 vanilla pod or a little vanilla extract)
For decoration:
- 100 g Torras dark chocolate with stevia or regular 80% dark chocolate
- 1 tablespoon coconut oil
METHOD
Mix all the dry and wet ingredients (I use a food processor with a blade for this), then transfer the mixture to a bowl and refrigerate for at least 30 minutes to let the ingredients come together.
Line a baking tray with parchment paper. Shape the dough into small balls, slightly bigger than a hazelnut (or smaller than a walnut, depending on how big you want the cookies), gently flatten them, and create a small indentation in the center with your finger. Make sure the indentation is not too shallow, as the cookies will puff up slightly while baking.
Bake at 170-175°C for about 10-13 minutes, or until they develop a light color.
Let the cookies cool, then fill them with melted chocolate mixed with a little coconut oil. For easier filling and drawing the “spider legs,” you can use a piping bag (or just a regular small bag with the tip cut off).
Allow the chocolate to set almost completely, then decorate the spiders with eyes as desired.
Enjoy your cookies!
MY TIPS
- For the spider eyes, you can use edible sugar decorations shaped like eyes (which you can remove before eating if desired, as the ingredients are not the most natural), or you can make eyes using a mixture of finely ground erythritol and a few drops of lemon juice. Alternatively, you can use pieces of almonds, almond flakes, or bits of other nuts, like macadamia nuts.
- If you replace the erythritol with stevia with regular erythritol, you’ll need to adjust or increase the amount of sweetener accordingly. Erythritol with stevia is about 25% sweeter than regular erythritol. Live & Love erythritol with stevia does not have the “cooling” aftertaste, which is not guaranteed with regular erythritol from other brands.
